Blue cheeses are generally classified as cheeses that have Penicillium cultures injected during the formation process to form a blue grey or blue green mold. Different types of blue cheeses include Roquefort, Gorgonzola, and Stilton.
I guess I like moldy cheese...do you like blue cheese?
I've recently discovered enjoyment in some cheeses, (thanks to Vic's recommendation of Say Cheese,) but I still can't do the blue yet. Somethings just doesn't seem right about it.=P
