So my worldly Metropolites ... what should I see, visit or know about Bali?

Hey Jenni,
Awesome that you're going to Bali. Haven't been there, but my only advice would be to go out and buy a lonely planet travel book. Of all the travel books I've bought, those are by far the best books out there.
They have proposed itineraries in the front of the book that lay out the highlights of a country based on how many days you have to travel and how long to travel between destinations.

The beaches at Kuta are contaminated with open sewage, you might want to avoid that :)

Bali is an awesome destination. Loved it so much we got married there.

Couple of things to do. Check out ku De ta for very cool restaurant/bar/nightclub in Seminyak.

La Lucciola is a time honoured tradition of fine dining in Seminyak.

legian is the place for all the cool nightclubs, it varies from month to month which is the place to be but they are all pretty much in the one area so stroll around and check them out.

Sanur is a lot calmer than Kuta/legian area so a great place to chill out during the day.

haggling is the norm for shopping so haggle hard but no when to stop don't try and push to hard.

be polite and respectful and the locals wil treat you beautifully, mind you they do anyway but nothing worse than being a horrible foreign tourist.

Definetly check out Ubud in the mountains for a nice change to the beach also some great art up there too.

A tour up to the mountains and over to Lovina and the north coast is worth doing to.

ulu Watu is a definite if you are a surfer or just like amazing scenery

You can visit these places--- the most popular part of the island with the amazing Kuta Beach, the cultural heart of Bali and the central mountain range, Ferries to Java and the West Bali National Park at west Bali, At north Bali you can visit, Quiet black sand beaches and the old capital city.
