The Easiest Coconut Layer Cake You'll Ever Make!

Having a few friends around for ice tea and some snacks? Or need to whip up something quick for the kids? Try this idea for a really pretty and scrumptious Coconut Layer Cake. Take Vanilla Cake Mix (I used Betty Crocker) and mix according to directions. Add a couple splashes of coconut flavoring at the end - about 2 teaspoons and bake in either small or regular pans. I happen to like using the small 6 inch pans so that I have an exceptionally tall cake that is not oversized. After cooling completely frost with Betty Crocker Whips Vanilla Icing - spread the frosting as evenly as possible rather than creating dips and waves. Sprinkle Coconut flakes over the top and press gently to the sides of the cake. Cut a few flowers from the garden or from a vase and adorn the top as you like.

Barefoot Contessa also has a premade mix for an amazing coconut cake. They have it at William Sonoma and Stonewall Kitchen and probably a few other specialty stores. It's TO DIE FOR. You should try it if you like coconut!
